Method

    Mix shallots, garlic, potatoes, lemon zest and rosemary spice into a 6 quart slow cooker.

    In separate dish, mix together 1 tablespoon flour, oil, salt, and pepper, then add to slow cooker

    On separate plate, place remaining flour on plate and use to coat lamb chops, shaking excess off.

    In large skillet, heat oil over medium to high heat, and cook lamb chops until brown on all sides (~10 minutes) Add to slow cooker.

    Using wine or a vinegar substitute, pour onto skillet and cook while scraping any remaining pieces of lamb chop. Add to slow cooker.

    Cook on high heat until lamb is tender (~3-4 hours)

    Mix in olives, and cook on cook covered for 20 more minutes.
