Sweet & Spicy Slow Cooker Ginger Beer Chicken

This sweet and spicy chicken is reminiscent of both Caribbean style pulled-pork barbecue and Mountain style North Carolina pulled pork barbecue cooked in a savory blend of spices. Layered on a simple base of onions and select spices, this slow-cooker recipe can be set up in less than an hour and arranged to cook all day while you are at work.

The first surprise with this delicious slow cooker recipe is the authentic ginger beer flavoring. The initial addition of several ounces during the softening and low-heat cooking allows the strongly acidic liquid to amass a concentrated amount of flavor from the added spices such as paprika and cracked black peppercorns. This serves a bit like a reduction sauce, though is optimized and designed to simply ‘work’ without needing any expert attention. While this initial concoction is simmering, tasty fats from the chicken thighs are beginning to coalesce with the now aromatic spiced flavorings.

When the rest of the ginger beer is added to this slow cooker recipe, the chicken thighs are completely immersed in the concentrated flavoring, and the fluid volume allows the spices to encapsulate the entire dish. The slower-cooked the better for this recipe, though high heat tends to add a bit of Southern Barbecue vibe to this otherwise roast-like recipe. Overall, this recipe will be a savory meal, well-suited for leftovers, and can be easily managed on low-heat settings while you are out for the day.
